I made some really spiffing soup yesterday. My soups are generally OK, quite nice even, but this one just hit the spot.
I’ve always had a soft spot for Leek & Potato soup. I don’t often make it though. I had some leeks, bought the previous week, that needed using up, plus a couple of sweet potatoes that my sis-in-law had bought when she and the family were up visiting. Now, I’ve never used sweet potatoes, but Rache said that I could basically do with them what I’d use ordinary potatoes for.
So, in for a penny… The resulting soup is gorgeous – and there’s enough left for dinner today!
