Well, the weather here is still a talking point. Beth’s marooned by the sea and I’ve kept the horses in as the wind and rain were so bad this morning.
So, soup was called for. I have a recipe that I use for lentil soup and I adapted it slightly to accommodate some parsnips that needed using up. (I also don’t cook it in the pressure cooker because it always burns if I do.) Due to my small cooker having a bad day, it took ages to cook. But it was worth the wait. Probably the best soup I’ve cooked to date (I’m not a prolific soup maker). Served in hand-thrown bowls and with the homemade oatmeal bread to the side it made a very filling lunch.
Now to brave the weather again to give the horses some more hay.
